HOLIDAY HIBISCUS SAUCE

In a saucepan, simmer 1 cup water with ¾ cup sugar, honey, or maple syrup.

Add 8 ounces fresh hibiscus (seed pod removed) and simmer.

Add 1 cup chopped fruit such as pear, apple, pineapple, or mango.

Add 2 Tablespoons grated fresh ginger.

Add grated zest and juice of 1 sweet orange.

Season with ground cinnamon, allspice, dried chile powder or hot sauce.

Simmer till thickened slightly.

Add a pinch of salt.

Stir in toasted pumpkin seeds, toasted pecans, or another favorite nut.

Store covered in the refrigerator.
