In a saucepan, simmer 4 cups water with the zest of orange, lime and lemon, knob of fresh ginger, cinnamon stick/whole clove/allspice berry and ¼ - ½ cup sugar or cane syrup. Stir in 4-5 cups fresh hibiscus, seed pod removed. Simmer till desired flavor. Turn off heat and steep for 30 minutes or till cool. Strain into a pitcher. Stir in fresh citrus juice and refrigerate. Serve iced with citrus slice and mint sprig.
